"As you know, Bob..." yeast risen bread is more nutritious than chemically risen. Inspired by this, I've 'created' Rolls that Rock.

Simply put: make your favourite bread dough. When it has risen, gently work in your favourite muffin flavourings. Shape into small rolls on a greased baking sheet to rise for up to an hour. Bake for half the time the loaf would have taken. Devour with delight.

To make one large loaf, my recipe is:

1 1/4 cups tepid water
3 Tbsp extra-virgin olive oil
3 Tbsp blackstrap molasses
1/2 tsp salt
4 cups strong wholemeal flour
1/3 cup ground flax seeds
1 1/4 tsp yeast

in that order in my bread machine, on dough setting.

This is sufficient dough for 12 large rolls. I divided the risen dough into three portions, to gently work in the flavourings. One batch of lightly crushed mixed nuts, one batch of cocoa powder with a little sugar, one batch of grated mature cheddar cheese with chilli flakes. Into the centre of each chocolate roll, I embedded three chunks of dark chocolate.

Form into rolls, allow to rise for up to an hour on two greased baking sheets, and then bake at Gas Mark 6 / 400 F / 200 C for ~20 mins, swapping the sheets around at half-time for even cooking. (Notice, it's much quicker than baking a loaf, too).

Allow to cook on a rack for 5 mins, then devour ... Gastrogasm! ... and the bread never has a chance to go stale...

Anything with self-raising flour, baking powder, bicarbonate of soda or cream of tartar ... like soda bread. So it's not all bad, but I can't get my American muffins to rise, so I wanted a Better Way :-)

Does sourdough count as yeast risen bread or is that a whole other ecosystem?

Sourdough is lambic, or feral, yeast :-)

Myles made his first batch of English muffins in the bread machine this week. It was an insanely sticky but very tasty experience and didn't help the weight loss programme any. yours sound really tasty. Will print out and save.
