The tangy mango was enrobed in lightly spiced, thickened juice and tucked in under crispy pastry. Gastrogasm :-)
Ooooo... I have a new recipe in my repertoire: soft fruit pie :-)
Layer the fruit with a little sugar, spice and rice flour, into a greased pie dish. Cover with a pastry lid. Bake until golden, about 20 mins at 200 C. If you want the fruit soft, either pre-cook, or turn down the oven and bake another 20 mins until bubbly.
This should work with just about any soft fruit, appropriate quantities of sugar (the minimum :-) and harmonious spices.
Mango and nutmeg PI existed for about half an hour, before it was cool enough for me to eat it all up entirely on my own with a small spoon and no friends HA! :-))))
