Met the author Stephen Walsh today ... told him how much I love his book :-) He told me about the guy in Canada who did controlled experiments on baking with ground flaxseed, measuring all the beneficial and deleterious substances in the resulting bread :-)

The only written information I have is that contained within his book, which I believe is hard to come by in the USA, and doesn't detail the experiments. The bottom line seems to be that frying with flaxseed oil destroys the omega-3s but baking with it does not ... and, moreover, the baking process destroys harmful substances in both the flax-seed and the wheat! Would you like a copy of the book ... it would be my pleasure :-)
